Enzymenformule Pro is a balanced formula with various types of enzymes, including carbohydrate, protein and fat-splitting enzymes. The product consists of an enzyme complex (BioCore® Optimum Complete) supplemented with a special gluten-splitting enzyme with the brand name Tolerase® G. Gluten are proteins that occur naturally in certain grains, such as wheat, rye and barley. Because gluten is rich in the amino acid proline, they can be difficult to break down. Enzymenformule Pro can be used with any meal and is suitable for vegetarians and vegans.

What are enzymes?
The word enzyme comes from the Greek ‘enzymos’, which means ‘in yeast’. An enzyme is a protein that can support a specific chemical reaction without being consumed or changing shape itself. It can split certain substances, such as those in food, into smaller building blocks. Each enzyme has a specific acidity (pH) and temperature at which activity is optimal.

Which enzymes are in it?
Enzymenformule Pro contains various enzymes, each with a different function. See the table below for an overview.

Enzyme activity
With enzymes, it is customary not to mention the quantities in milligrams or grams, but in a specific enzyme activity. After all, it is not about how much an enzyme weighs, but about how well and how quickly an enzyme can split a certain substance. This is reflected in the enzyme activity. There are international guidelines that indicate how to measure the activity per enzyme and how to display this on the label. The unit of measurement differs per enzyme and the various abbreviations refer to the way in which they determine the enzyme activity of those specific enzymes. An example of this is DU (abbreviation of Dextrinizing Unit), which indicates how well and how quickly starch is split into shorter carbohydrate chains (dextrins) by this specific amylase. The higher the stated value, the stronger the enzyme activity.

How are the enzymes in Enzymenformule  Pro made?
There are various types of enzymes on the market. These can come from animal sources, plants or micro-organisms. BioCore® Optimum Complete from Deerland and Tolerase® G from DSM are both produced by means of a fermentation process using micro-organisms (such as yeasts). These micro-organisms are grown on a nutrient medium and they convert the nutrients in that nutrient medium into enzymes through fermentation. Microorganisms have specific preferences regarding the nutrient medium they thrive on. For the production of BioCore® Optimum Complete, it is therefore necessary to use some wheat and soy in the fermentation process, as part of the nutrient medium. After the fermentation process, the enzymes formed are carefully filtered by producer Deerland to remove as much residual wheat and soy as possible. However, it is possible that a very small amount of this remains in the final product, which is why this is stated on the label.
